Instructions:
Preheat the Oven: Begin by setting your oven to 350°F (175°C).
Prepare the Bread: Cut off the top quarter of the bread loaf and set aside. Place the wheel of brie on the center of the loaf and trace a circle around it. Carve out the bread within the circle to make room for the cheese.
Create Pull-Apart Sections: Make incisions around the perimeter of the loaf, approximately 1.5 inches apart, ensuring each cut stops three-quarters of the way down to form pull-apart pieces.
Season the Bread: Brush the hollow inside with olive oil, season with salt and pepper, and sprinkle with half of the thyme.
Add Brie and Cranberry Sauce: Nestle the brie into the hollow, then scatter the remaining thyme and cranberry sauce over the top.
Bake the Brie: Replace the top of the bread, transfer to a baking sheet lined with aluminum foil or parchment paper, and bake for about 20 minutes, until the brie is melted and the bread crusty.
Serve: Present immediately with the previously removed bread pieces, toasted for extra dipping pleasure.
