Twice Baked Potato Boats

Instructions:

Preheat and Prep: Heat your oven to 400°F (200°C). Wash the potatoes and pierce them with a fork a few times. Bake directly on the rack for about 1 hour, or until tender.

Cook the Filling: While the potatoes bake, heat a skillet over medium-high. Add the ground beef, onions, and garlic. Cook until the beef is browned. Drain excess fat and set aside.

Combine Ingredients: Once potatoes are cool enough to handle, slice them in half and scoop out most of the flesh, leaving a thin layer to support the skin. Mash the scooped potato with sour cream, butter, salt, and pepper. Fold in the cooked beef mixture.

Stuff and Bake: Spoon the mixture back into the potato skins. Top with shredded cheese. Place back in the oven for about 15 minutes or until the cheese is bubbly and golden.

Serve and Enjoy: Garnish with fresh chives and serve hot!
