Tater Tot Breakfast Casserole

Instructions:

Preheat the Oven: Set your oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.

Brown the Sausage: Heat a large skillet over medium-high. Cook the sausage until it starts to brown. Stir in the onions and bell peppers, continue cooking until the sausage is thoroughly browned and vegetables are tender. Drain any excess grease.

Layer the Tater Tots: Arrange a layer of frozen tater tots at the bottom of your greased dish.

Add Cheese: Scatter half of each cheese type over the tater tots.

Prepare the Egg Mixture: Whisk together the eggs, milk, salt, and pepper in a bowl. Pour this over the cheese layer.

Add the Sausage Mix: Evenly distribute the cooked sausage and vegetables over the egg layer.

Top Off: Place the remaining tater tots and cheese on top.

Bake: Cover with foil and bake for 30 minutes. Remove the foil and bake for another 25 minutes until the cheese is bubbly and the casserole sets.

Rest and Serve: Let the casserole stand for 10 minutes before serving. This allows it to set up for easier slicing.
