  • 4 large bell peppers, halved and seeds removed

  • 1 can (14 oz/400g) black beans, drained and rinsed
  • 1 cup (240ml) corn kernels (fresh, frozen, or canned)
  • 1 cup (240ml) salsa
  • 1 cup (100g) shredded Mexican blend cheese
  • Fresh cilantro, chopped, for garnish
  • Sour cream, for serving (optional)
  • Sliced green onions, for garnish (optional)

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 375°F (190°C).
  2. Prepare Bell Peppers:
    • Cut the bell peppers in half lengthwise and remove the seeds and membranes. Place the pepper halves in a baking dish.
  3. Brown the Meat:
