You really can’t go wrong with tacos for dinner. Just about everyone loves them, and they’re easy to tailor to different dietary needs or preferences. Cook up your fillings, prep the toppings, and let your crew serve themselves. Easy-peasy. The only thing you need now is a good side dish, and our Taco Night Rice is the perfect choice. This stovetop rice dish is made with pantry staples, takes minimal prep, and comes together in about half an hour. Can’t beat that on a busy evening.

Start out by rinsing the rice in a fine mesh strainer until the water draining out is clear in color. This removes the excess starch and gives the final dish a better texture. You’ll then heat a few tablespoons of oil in a large pan and cook the grains of rice until they start to turn golden in color. Next, add the diced onion and cook until softened. The tomato sauce, broth, and seasonings are then mixed in and the dish is brought to a boil.

You’ll then reduce the heat to a simmer and cover the pan. Let the rice simmer for a little over 20 minutes or until tender. Fluff it up with a fork and then it’s time to dig in! This dish makes a great side for tacos, enchiladas, and many of our favorite Mexican dishes. It’s the perfect way to round out a meal and everyone is sure to love the comforting flavor.
