Sweet hawaiian crockpot chicken

Ingredients:

  • 4-6 boneless, skinless chicken breasts
  • 1 cup pineapple juice
  • 1/2 cup soy sauce
  • 1/2 cup honey
  • 1/4 cup hoisin sauce
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1/4 teaspoon red pepper flakes (optional, for heat)
  • 1 can (20 oz) pineapple chunks, drained
  • 2 tablespoons cornstarch (optional, for thickening)
  • Sesame seeds and chopped green onions for garnish (optional)

Instructions:

  1. In a bowl, whisk together the pineapple juice, soy sauce, honey, hoisin sauce, minced garlic, grated ginger, and red pepper flakes (if using).
  2. Place the chicken breasts in the slow cooker and pour the sauce over them.
  3. Add the drained pineapple chunks on top.
  4. Cover and cook on low for 4-6 hours or until the chicken is cooked through and tender. You can also cook it on high for 2-3 hours.
  5. Optional: If you prefer a thicker sauce, about 30 minutes before serving, mix 2 tablespoons of cornstarch with 2 tablespoons of cold water to create a slurry. Stir the slurry into the crockpot, and let it continue cooking until the sauce thickens.
  6. Once the chicken is cooked, shred it using two forks directly in the slow cooker, allowing it to absorb more of the flavorful sauce.
