Sweet hawaiian crockpot chicken
Ingredients:
- 4-6 boneless, skinless chicken breasts
- 1 cup pineapple juice
- 1/2 cup soy sauce
- 1/2 cup honey
- 1/4 cup hoisin sauce
- 2 cloves garlic, minced
- 1 teaspoon ginger, grated
- 1/4 teaspoon red pepper flakes (optional, for heat)
- 1 can (20 oz) pineapple chunks, drained
- 2 tablespoons cornstarch (optional, for thickening)
- Sesame seeds and chopped green onions for garnish (optional)
Instructions:
- In a bowl, whisk together the pineapple juice, soy sauce, honey, hoisin sauce, minced garlic, grated ginger, and red pepper flakes (if using).
- Place the chicken breasts in the slow cooker and pour the sauce over them.
- Add the drained pineapple chunks on top.
- Cover and cook on low for 4-6 hours or until the chicken is cooked through and tender. You can also cook it on high for 2-3 hours.
- Optional: If you prefer a thicker sauce, about 30 minutes before serving, mix 2 tablespoons of cornstarch with 2 tablespoons of cold water to create a slurry. Stir the slurry into the crockpot, and let it continue cooking until the sauce thickens.
- Once the chicken is cooked, shred it using two forks directly in the slow cooker, allowing it to absorb more of the flavorful sauce.
