Instructions:
Prepare the Meatballs: In a bowl, combine ground pork, egg, breadcrumbs, garlic, onion, salt, and pepper. Mix well and form into small balls.
Cook the Meatballs: In a skillet over medium heat, cook meatballs until browned and cooked through, about 8-10 minutes. Remove and set aside.
Make the Sauce: In the same skillet, combine pineapple juice, soy sauce, hoisin sauce, and brown sugar. Bring to a simmer. Add the dissolved cornstarch and stir until the sauce thickens.
Combine and Serve: Return meatballs to the skillet, add pineapple chunks, and toss to coat with the sauce. Serve the meatballs and pineapple over cooked rice, garnished with chopped spring onions.
