Spinach Garlic Meatballs Stuffed With Mozzarella

Instructions:

Prepare the Spinach:

In a skillet, heat olive oil over medium heat. Add the spinach and toss until well coated. Allow to wilt for a few minutes.
Stir in the minced garlic and sauté for another 1-2 minutes until fragrant. Remove from heat, chop finely, and let it cool.
Make the Meatballs:

Preheat your oven to 350°F (175°C).
In a large mixing bowl, combine the ground beef, ground pork, bread crumbs, eggs, milk, chopped garlic, Parmesan cheese, salt, pepper, and the cooled spinach mixture. Mix thoroughly.
Form the mixture into evenly sized meatballs. Press a cube of mozzarella into the center of each meatball and seal the meat around the cheese.
In a cast iron skillet, heat some olive oil over medium-high heat. Sear the meatballs until golden brown on all sides.
Spoon some marinara sauce into the skillet around the meatballs to create a sauce bed. Cover the skillet with foil.
Bake in the preheated oven for 20-25 minutes, or until the meatballs are fully cooked and reach an internal temperature of 165°F (74°C).
Serve and Enjoy:

Serve the meatballs hot over your favorite pasta, sprinkled with extra Parmesan and garnished with fresh herbs if desired.
