Instructions:
Prepare the Dough:
In a large mixing bowl, combine 750 g of wheat flour and 1 teaspoon of salt.
Gradually add 600 ml of water to the flour mixture, mixing well until a dough forms.
Knead the dough well with your hands, adding flour as needed to prevent sticking.
Let the dough rest for 10 minutes.
Divide the Dough:
After resting, sprinkle some flour on the work surface.
Divide the dough into 2 parts, then further divide each part into 16-18 smaller portions.
Prepare the Dough Portions:
Slightly enlarge each dough portion with your hands and dip them into the melted butter.
Place the butter-coated dough portions on a tray, cover with cling film, and set aside for 1 hour.
Prepare the Filling:
Heat some vegetable oil in a pan over medium heat.
Add the finely chopped green onions and fry until soft.
In a bowl, combine the fried green onions with the chopped boiled eggs.
Season the mixture with salt and pepper to taste, and mix well.
Assemble the Pastries:
Preheat your oven to 200°C (398°F).
Roll out each dough portion with your hands to form a flat disc.
Add some of the prepared stuffing to the center of each disc.
Fold the dough over the filling, sealing the edges.
Bake:
Place the stuffed pastries on a baking sheet.
Bake in the preheated oven for 30-35 minutes, or until golden brown.
Serve:
Remove the pastries from the oven and let them cool slightly before serving.
