Roasted Carrots, Potatoes & Onions,Beef Roast

 

Ingredients:

 

1 beef roast (such as chuck roast or sirloin roast)

4-5 large carrots, peeled and cut into chunks

4-5 medium potatoes, peeled and cut into chunks

1 large onion, sliced

4 cloves of garlic, minced

2 tablespoons olive oil

1 teaspoon dried thyme

1 teaspoon dried rosemary

Salt and pepper to taste

Instructions:

 

Preheat your oven to 375°F (190°C).

Place the beef roast in a roasting pan or a baking dish.

In a small bowl, mix together the minced garlic, olive oil, dried thyme, dried rosemary, salt, and pepper.

Rub the garlic and herb mixture all over the beef roast, coating it evenly.

Arrange the carrots, potatoes, and onion around the beef roast in the roasting pan.

Drizzle some olive oil over the vegetables and season with salt and pepper.

Place the roasting pan in the preheated oven and roast for about 1 to 1 1/2 hours, or until the beef is cooked to your desired level of doneness and the vegetables are tender. The cooking time may vary depending on the size of the roast.

Check the internal temperature of the beef roast using a meat thermometer. For medium-rare, it should register around 135°F (57°C), and for medium, it should register around 145°F (63°C).

Once cooked, remove the beef roast from the oven and let it rest for a few minutes before slicing.

Serve the roasted carrots, potatoes, onions, and sliced beef roast together on a platter or individual plates.

Optionally, you can pour the pan juices over the sliced beef for added flavor.
