Ingredients:

  • 2 ribeye steaks (about 1 to 1.5 inches thick)
  • Salt and black pepper, to taste
  • 2 tablespoons olive oil or vegetable oil
  • 2 cloves garlic, minced (optional)
  • 2 tablespoons unsalted butter
  • Fresh herbs (thyme, rosemary) for extra flavor (optional)

Instructions:

  1. Bring the Steak to Room Temperature: Take the ribeye steaks out of the refrigerator at least 30 minutes before cooking to bring them to room temperature. This helps ensure more even cooking.
  2. Season the Steaks: Pat the steaks dry with paper towels. Season both sides generously with salt and pepper. Optionally, you can add minced garlic and fresh herbs for extra flavor.
  3. Preheat the Oven: Preheat your oven to 400°F (200°C).
  4. Preheat a Skillet or Pan: Heat a cast-iron skillet or oven-safe pan over high heat. Add the oil and let it heat until it shimmers but does not smoke.

  8. Rest the Steaks: Remove the skillet from the oven and transfer the steaks to a cutting board. Let them rest for about 5-10 minutes. This allows the juices to redistribute throughout the meat.
  9. Slice and Serve: Slice the ribeye against the grain into 1/2-inch slices. Serve immediately, and optionally, drizzle with any remaining pan juices.
