Pumpkin Crunch Cake

Instructions:

Begin by preheating your oven to 350°F (175°C) and greasing a 13×9 inch baking dish.

In a large mixing bowl, whisk together the pumpkin puree, evaporated milk, eggs, sugar, cinnamon, and salt until smooth and well combined.

Transfer this mixture into your greased baking dish.

Evenly sift the yellow cake mix over the top of the pumpkin mixture.

Scatter the chopped pecans across the cake mix layer.

Gently pour the melted butter over everything, making sure it covers the pecans and cake mix evenly.

Place the dish in the oven and bake for about 50-55 minutes, or until the topping is golden brown and the center sets.

Remove from the oven and allow the cake to cool completely at room temperature. You can serve it either chilled or warm, topped with a dollop of Cool Whip.
