Instructions:

Heat your oven to 350°F (175°C). Prepare a muffin pan with liners or a light greasing.

In a sizable mixing bowl, combine the pumpkin puree, both sugars, oil, eggs, and vanilla. Stir these until they form a smooth mixture.

In a separate bowl, sift together the flour, baking powder, cinnamon, nutmeg, and salt.

Slowly mix the dry ingredients into the wet pumpkin mixture, taking care not to over-mix.

Distribute the muffin batter evenly across the muffin cups.

Bake in the preheated oven for 18-20 minutes. Check for doneness by inserting a toothpick into a muffin; it should come out clean.

Allow the muffins to cool in the pan for a few minutes before removing.
