Poor Man’s Prime Rib

It’s time to take Prime Rib to a whole new affordable level with this Poor Man’s Prime Rib. Two Chuck Roasts tied together to bring you the flavor you know and love!

INGREDIENTS
- 2 – Chuck Roasts (3lb average)
- ½ C– Prime Time – Buttery Beef Rub
DIRECTIONS
- Using a meat tenderizer, pound out the chuck roasts to 2” thickness. Season all sides generously with Prime Time.
- Lay the two roasts side by side with the longer edges next to each other, then pull together to overlap the two roasts by 2”.
- Starting with the piece that lays on top, roll the meat inward to make the large roast.
- Tie together with butcher’s twine.
- Place the roast on a rack lined roasting pan.
- Allow to rest at room temperature for 30 minutes while the smoker preheats to 500 degrees.
- Place the roast on the smoker for 20 minutes and then decrease the temperature down to 300 degrees.
- Smoke until the internal temperature of the roast reaches 120 degrees.*Be sure to take temperature from multiple location on the roast. Since it is rolled together, there can be some inconsistency in density and temperature.
- Rest the roast for at least 20 minutes before removing the twine and slicing to serve.
