Instructions:
Tenderize and Marinate the Steak:
Pound the steak with a meat mallet to tenderize. In a freezer-size Ziploc bag, whisk together all marinade ingredients, reserving 2 tablespoons for later use. Add the steak to the bag, seal, and massage the marinade into the steak. Marinate for at least 4 hours or up to 12 hours in the refrigerator.
Prepare Herb Butter:
In a medium bowl, mash the butter with the lemon zest, garlic, fresh chives, minced herbs, salt, and pepper until well combined. Roll the butter mixture into a log using plastic wrap, twist the ends to seal, and refrigerate until firm.
Broil the Steak:
Preheat your broiler to high (550°F) for 10 minutes. Remove the steak from the marinade, let it rest for 20 minutes at room temperature, and place it in a foil-lined baking dish. Broil the steak 6 inches away from the heat for 5-7 minutes per side or until an internal thermometer reads 130-135°F for medium-rare, or 140-145°F for medium.
Rest and Serve:
Remove the steak from the oven, transfer it to a cutting board, and let it rest for 10 minutes. Slice the steak across the grain into strips and drizzle with the reserved marinade. Serve with a generous slice of herb butter on top.
