No-Bake Caramel Apple Cheesecake

Ingredients:
- 2 cups graham cracker crumbs
- 1/2 cup melted butter
- 2 tablespoons sugar
- 3 packages (8 ounces each) cream cheese, softened
- 1/2 cup sugar (adjust to taste)
- 1 teaspoon vanilla extract
- 2 cups whipped cream
- 1 cup finely chopped apples
- 1/4 cup butter
- 1/2 cup brown sugar
- 1/2 cup caramel sauce
- 1/4 cup chopped pecans
- 1 cup chopped apples
Directions:
- In a medium bowl, combine graham cracker crumbs, melted butter, and 2 tablespoons sugar. Press mixture into the bottom of a 9-inch springform pan. Refrigerate for 10 minutes.
- In a large bowl, beat cream cheese and 1/2 cup sugar until smooth. Add vanilla extract and mix until combined. Fold in whipped cream until well incorporated.
- In a skillet, melt 1/4 cup butter over medium heat. Add finely chopped apples and brown sugar, stirring until apples are caramelized, about 5-7 minutes. Let cool slightly.
- Pour half of the cream cheese mixture over the crust. Sprinkle with half of the caramelized apples.
- Pour remaining cream cheese mixture over apples and top with remaining caramelized apples. Drizzle with caramel sauce.
- Refrigerate for at least 4 hours or overnight until set.
- Before serving, sprinkle with chopped pecans.
