I never learned the traditional method for making goulash; I only knew it involved noodles, ground beef, and a tomato-based sauce, based on my Mom’s recollections of her mother’s version. However, my mom never made it, so I developed my own approach, somewhat similar to how I prepare spaghetti with meat sauce, but substituting macaroni noodles.

I finally had the opportunity to taste authentic (Americanized authentic, not Hungarian authentic) goulash at my in-laws’ home. I had long wanted to obtain my mother-in-law’s recipe because, even though Dennis never says, ‘This isn’t how Mom used to make it,’ I’ve always aspired to recreate his cherished childhood meals. Goulash topped that list. After savoring it on Easter, I asked her for the exact ingredients so I could replicate it at home. Now, I’ve never made a better goulash, and Dennis’s favorite has become one of mine as well. We could enjoy this almost every week!

Mom’s Goulash

Here’s a recipe for a comforting and delicious Mom’s Goulash:

Ingredients:
  • 1 pound ground beef
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 2 cups elbow macaroni, uncooked
  • 1 can (15 ounces) tomato sauce
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 2 tablespoons tomato paste
  • 2 teaspoons paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and black pepper, to taste
  • 1 cup beef broth
  • 1 cup shredded cheddar cheese (optional, for topping)
  • Chopped fresh parsley, for garnish (optional)
Instructions:
  1. Cook the Ground Beef: In a large skillet or Dutch oven, brown the ground beef over medium-high heat until fully cooked. Drain excess fat if needed.
  2. Add Vegetables: Add the chopped onion, minced garlic, red bell pepper, and green bell pepper to the skillet. Sauté until the vegetables are softened.
  3. Season and Add Pasta: Stir in the tomato sauce, diced tomatoes, tomato paste, paprika, oregano, basil, salt, and black pepper. Mix well. Add the uncooked elbow macaroni and beef broth. Stir to combine.
  4. Simmer: Bring the mixture to a simmer. Reduce the heat to low, cover, and let it simmer for about 15-20 minutes or until the pasta is tender, stirring occasionally.
  5. Check Seasoning: Taste and adjust the seasoning if needed. If you prefer more spice, you can add additional paprika.
  6. Serve: Once the pasta is cooked, remove the skillet from the heat. If desired, top with shredded cheddar cheese and let it melt over the goulash. Garnish with chopped fresh parsley.
