Mini Cheesy Meatloaf Bites with a Savory Surprise

Directions:

Preheat oven to 375°F (190°C). Grease a mini muffin tin with cooking spray.

In a large bowl, combine ground beef, breadcrumbs, milk, egg, salt, pepper, garlic powder, onion powder, cheddar cheese, onion, and bell pepper. Mix until well combined.

Take a tablespoon of the meat mixture and press it into the bottom and sides of each muffin cup, creating a small well in the center.

Place a pinch of shredded mozzarella cheese into each well.

Cover the cheese with another tablespoon of the meat mixture, pressing down gently to seal.

In a small bowl, whisk together ketchup, brown sugar, and Worcestershire sauce. Brush or spoon the glaze over each meatloaf bite.

Bake for 20-25 minutes, or until meatloaf bites are cooked through and the tops are caramelized.

Remove from oven and let cool for a few minutes before serving.
