Instructions:
Brown the Beef: In a skillet over medium heat, cook the ground beef until no longer pink, draining any excess fat. Mix in the diced onion and garlic, sautéing until tender.
Season: Add chili powder, cumin, paprika, salt, and pepper to the skillet, stirring to coat the beef evenly. Cook for a couple more minutes to enhance the flavors.
Prepare Tortillas: Warm the tortillas in a skillet or microwave to soften them for easy rolling.
Assemble: Preheat your oven to 350°F (175°C). Smear a bit of enchilada sauce on the bottom of a baking dish. Spoon the beef mixture onto each tortilla, add cheese, and roll tightly, placing seam-side down in the dish.
Top it Off: Drizzle the rest of the enchilada sauce over the rolled tortillas and sprinkle with the remaining cheese.
Bake: Cover with foil and bake for 20 minutes. Remove the foil and continue baking for 5-10 minutes until the cheese is bubbly and golden.
Serve: If desired, top with sour cream and cilantro before serving.
