Ingredients:

  • 1 1/2 lbs pork belly, cut into bite-sized pieces
  • 4 teaspoons Dijon mustard
  • 1/4 cup pure maple syrup
  • 1 teaspoon black pepper
  • 1 teaspoon kosher salt
  • 1 1/2 teaspoons apple cider vinegar
  • 3 tablespoons canola oil

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a small bowl, whisk together the Dijon mustard, pure maple syrup, black pepper, kosher salt, and apple cider vinegar until well combined.
  3. Place the pork belly bites in a large mixing bowl. Pour the maple mustard mixture over the pork belly bites and toss until they are evenly coated.
  4. Heat the canola oil in a large oven-safe skillet over medium-high heat.
  5. Once the oil is hot, carefully add the pork belly bites to the skillet, making sure they are in a single layer and not overcrowded. You may need to cook them in batches if your skillet is not large enough.
  6. Sear the pork belly bites on all sides until they are golden brown and caramelized, about 2-3 minutes per side.
  7. Once the pork belly bites are seared, transfer the skillet to the preheated oven.
  8. Roast the pork belly bites in the oven for 20-25 minutes, or until they are cooked through and the edges are crispy.
  9. Remove the skillet from the oven and let the pork belly bites rest for a few minutes before serving.
  10. Serve the maple mustard pork belly bites hot as an appetizer or main dish. You can garnish them with chopped fresh herbs like parsley or green onions if desired.
