Mama’s Cornbread Dressing
Ingredients:
For the Cornbread:
- 2 cups cornmeal
- 1 cup all-purpose flour
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1 1/2 cups buttermilk
- 2 large eggs
- 1/4 cup vegetable oil
For the Dressing:
- 8 cups crumbled cornbread
- 2 cups stale bread, torn into small pieces
- 1 cup unsalted butter
- 2 cups onion, finely chopped
- 1 1/2 cups celery, finely chopped
- 4 cups chicken broth
- 4 large eggs, beaten
- 2 teaspoons sage, dried
- 1 teaspoon thyme, dried
- 1/2 teaspoon black pepper
- Salt to taste
Instructions:
1. Prepare the Cornbread:
- Preheat the oven to 425°F (220°C).
- In a large bowl, mix together cornmeal, flour, baking powder, and salt.
- In another bowl, whisk together buttermilk, eggs, and vegetable oil.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Pour the batter into a greased baking dish and bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
- Allow the cornbread to cool, then crumble it into a large mixing bowl.
2. Prepare the Dressing:
- Preheat the oven to 350°F (175°C).
- In a large skillet, melt the butter over medium heat. Add the chopped onions and celery, and sauté until they are softened.
- Add the sage, thyme, black pepper, and salt to the skillet, and continue to sauté for an additional 2-3 minutes.
- In a large mixing bowl, combine the crumbled cornbread, torn stale bread, and the sautéed onion and celery mixture.
- In a separate bowl, beat the eggs and mix in the chicken broth.
- Pour the egg and broth mixture over the cornbread mixture, stirring until well combined. The consistency should be moist but not soupy.
- Transfer the dressing to a greased baking dish.
3. Bake the Dressing:
- Bake in the preheated oven for 45-55 minutes or until the top is golden brown and the dressing is set in the middle.
- Allow the dressing to cool for a few minutes before serving.
