Instructions:

1. Start by preheating your oven to 350°F (175°C). Line a baking sheet with parchment paper for easy cleanup.

2. In a large mixing bowl, cream together the softened butter and granulated sugar until the mixture is light and fluffy. Take your time to beat it well, as this will create a lovely airy cookie texture.

3. Incorporate the eggs one at a time, ensuring each egg is fully mixed in before adding the next. Make sure to mix in the vanilla extract afterward for an added layer of flavor.

4. Gently fold in the lemon curd, lemon zest, baking powder, and salt until everything is well combined. You want to see those delightful specks of zest throughout the batter!

5. Gradually add the flour, mixing just until combined. Be careful not to overmix, as this can lead to tougher cookies.

6. Using a spoon or cookie scoop, drop heaping tablespoons of the dough onto the prepared baking sheet, spacing them about 2 inches apart.
