Ingredients:
4 large russet potatoes, well-scrubbed and dried
4 tbsp olive oil
1.5 tbsp sea salt
2 lbs steak (such as NY strip, ribeye, sirloin, or tenderloin), trimmed and cut into 2-inch pieces
2 tsp kosher salt
2 tbsp garlic, finely minced (approx. 8-10 cloves)
6 tbsp butter, softened, divided
2 tbsp Cajun seasoning (opt for low sodium and adjust salt as needed)
4 tbsp avocado oil, divided
1 1/2 cups heavy cream
2/3 cup grated Parmesan cheese
2 tbsp fresh parsley, finely chopped
Juice of 2 lemon wedges
1/2 to 1 tsp red pepper flakes
1 tsp freshly cracked black pepper
