Glazed Honey Pineapple Salmon
Ingredients:
- 4 salmon fillets
- 1 cup pineapple juice
- 1/4 cup honey
- 3 tablespoons soy sauce
- 2 cloves garlic, minced
- 1 teaspoon ginger, grated
- 1 tablespoon olive oil
- Salt and pepper to taste
- Pineapple slices for garnish
- Chopped green onions for garnish
Directions:
- Preheat the oven to 375°F (190°C).
- In a small bowl, whisk together pineapple juice, honey, soy sauce, minced garlic, and grated ginger.
- Season the salmon fillets with salt and pepper.
- Heat olive oil in a large oven-safe skillet over medium-high heat.
- Sear the salmon fillets, skin side up, for 2-3 minutes until golden brown.
- Flip the salmon fillets and pour the honey pineapple mixture over them.
- Transfer the skillet to the preheated oven and bake for 10-12 minutes, or until the salmon is cooked through.
- Garnish with pineapple slices and chopped green onions before serving.
