Honey Pineapple Salmon

Glazed Honey Pineapple Salmon

Ingredients:

  • 4 salmon fillets
  • 1 cup pineapple juice
  • 1/4 cup honey
  • 3 tablespoons soy sauce
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Pineapple slices for garnish
  • Chopped green onions for garnish

Directions:

  1. Preheat the oven to 375°F (190°C).
  2. In a small bowl, whisk together pineapple juice, honey, soy sauce, minced garlic, and grated ginger.
  3. Season the salmon fillets with salt and pepper.
  4. Heat olive oil in a large oven-safe skillet over medium-high heat.
  5. Sear the salmon fillets, skin side up, for 2-3 minutes until golden brown.
  6. Flip the salmon fillets and pour the honey pineapple mixture over them.
  7. Transfer the skillet to the preheated oven and bake for 10-12 minutes, or until the salmon is cooked through.
  8. Garnish with pineapple slices and chopped green onions before serving.
