Honey Mustard Chicken with Bacon and Mushrooms

Instructions:

Sprinkle chicken breasts with seasoning salt and let sit for 5 minutes.

Microwave bacon on a paper towel-lined plate, covered with more paper towels, for about 4 minutes until crisp. Blot, cool, and crumble. Set aside.
Microwave mushrooms in a small bowl for 1 minute to soften. Set aside.

In a small bowl, mix mustard, honey, mayonnaise, yogurt, and onion flakes or scallions. Set aside.
Coat a large nonstick pan with cooking spray and heat with olive oil. Sauté chicken over medium heat for 3-5 minutes per side until browned. Transfer chicken to a baking dish lightly coated with cooking spray.

Spread most of the honey mustard sauce over each chicken breast. Layer with mushrooms, top with remaining honey mustard sauce, crumbled bacon, and sprinkle with shredded cheese.

Bake in a preheated 350°F oven for about 15 minutes, until the cheese is melted and the chicken is cooked through.
