Homemade Kentucky Blackberry Cobbler

Ingredients:

  • 4 cups fresh blackberries
  • 1 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • Whipped cream or vanilla ice cream (optional, for serving)

Instructions:

  • 1. Preheat your oven to 375°F (190°C).
  • 2. In a mixing bowl, combine the blackberries, 1 cup of sugar, and lemon juice. Gently toss the blackberries until they are coated in the sugar and lemon juice mixture.
  • 3. In a separate bowl, whisk together the flour, 1 cup of sugar, baking powder, and salt.
  • 4. Add the melted butter, milk, and vanilla extract to the dry ingredients. Stir until the batter is well combined and smooth.
  • 5. Grease a 9×9-inch baking dish or a similar-sized ovenproof dish.
