Fondly known as “Hamburger Stew” in our home, my Mom would whip up this delightful dish, especially during the chilly autumn and winter months. Whether I came home from school or returned from playing outside in the cold, the aroma wafting from the kitchen was always a source of comfort.

Crockpot Cowboy Soup Recipe

Ingredients:

  • 1 lb ground beef
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained (or use frozen corn)
  • 1 can (14 oz) diced tomatoes, undrained
  • 1 can (8 oz) tomato sauce
  • 1 can (4 oz) diced green chilies
  • 4 cups beef broth
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • Salt and pepper, to taste
  • Optional toppings: shredded cheese, sour cream, chopped green onions, cilantro

Instructions:

  1. Brown the Ground Beef:
    • In a skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat.
