Grilled Cheese with Gouda, Roasted Mushrooms, and Onions

Instructions:

1. Roast the Vegetables:
Preheat your oven to 400°F (200°C). In a bowl, toss together the mushrooms and onions with olive oil, and season generously with salt and pepper. Spread the mixture evenly on a baking sheet. Roast for about 20-25 minutes, stirring halfway through, until the mushrooms are tender and the onions are caramelized.

2. Assemble the Grilled Cheese:
Warm a skillet or griddle over medium heat. Lay one slice of bread in the pan, then place a layer of Gouda cheese on top. Follow this with a portion of the roasted mushrooms and onions. Add another layer of Gouda, and finish with the second slice of bread.

3. Grill the Sandwich:
Grill each side for 3-4 minutes, pressing down gently with a spatula, until the bread turns golden and crispy, and the cheese is melted and gooey.

4. Serve:
Cut the sandwich in half and serve immediately. Relish in the savory roasted flavors paired with creamy Gouda in every bite!
