Assemble the sandwiches by spreading a generous amount of gouda on a slice of bread, followed by a layer of the roasted mushrooms and onions, and another layer of gouda. Season
with a pinch of salt and pepper. Top with another slice of bread and press gently to secure the fillings.
Dip and flip each sandwich quickly in the skillet to coat with butter, then fry. Allow each side to cook until golden brown, about 2 minutes per side, flipping once. The goal is a crispy exterior with a gooey, melted cheese center.
Repeat the process for the second sandwich, ensuring both are evenly cooked and deliciously golden.
