Instructions

  • Prepare the Mold:

Line a muffin tin with paper liners or use a silicone mold for easier removal.

  • Melt the Chocolate:

In a microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between, until fully melted and smooth.

  • Coat the Molds:

Spoon a small amount of melted chocolate into each liner, just enough to cover the bottom. Use the back of a spoon to spread it up the sides slightly. Reserve some chocolate for the top. Place the muffin tin in the refrigerator for about 10-15 minutes to set.

  • Make the Peanut Butter Filling:

In a bowl, mix together the peanut butter, powdered sugar, vanilla extract, and salt until smooth and well combined.

  • Fill with Peanut Butter:

Remove the chocolate-coated molds from the fridge. Spoon a generous amount of the peanut butter mixture into each chocolate base, pressing down lightly to flatten.

  • Top with Chocolate:

Pour the reserved melted chocolate over the peanut butter filling, covering it completely. Smooth the tops with a spatula if needed.

  • Chill:

Return the muffin tin to the refrigerator and let the cups chill for at least 30 minutes, or until the chocolate is fully set.

  • Serve:

Once set, carefully peel off the liners and enjoy your gourmet chocolate peanut butter cups!

  • Tips

Experiment with different types of chocolate, like dark, milk, or white, to find your favorite combination.
For an extra touch, sprinkle sea salt on top of the chocolate before it sets.
