Ginger-Lime Chicken with Honey and Soy

 

Ginger Lime Chicken with Honey is delicious and if you remove the chili powder and green chilies and double the honey, children love it.

Ingredients

2 tbsp balsamic vinegar

1 tbsp honey

1/3 cup minced fresh ginger

2 hot green chillies, finely chopped

2 tsp garam masala

1½ tsp ground coriander

1 tsp ground cumin

½ tsp chilli powder

1 tbsp sea salt, or to taste

1 tsp cracked black pepper

3 ½ tsp grated lime zest (divided usage)

4 chicken legs, cut into drumsticks and thighs

2 tsp sugar

4 tbsp unsalted butter (divided usage)

2 tbsp canola oil

2 tbsp fresh lime juice

Lime wedges, for serving

Preheat the oven to 200°C.

In a bowl, whisk together the vinegar, honey, ginger, green chillies, garam masala, ground coriander, ground cumin, chilli powder, salt, pepper and three teaspoons of the lime zest. Prick the chicken legs with a fork, add them to the bowl, and toss.

In a small bowl, mix together the sugar and the remaining lime zest.

In a large ovenproof skillet, melt two tablespoons of the butter in the oil over a medium-high flame.

Add the chicken and cook, turning, until golden, for five minutes.

Remove from the flame, sprinkle with the lime sugar and roast in the preheated oven for 25 minutes, or until the chicken is cooked.

Add the lime juice and the remaining butter to the skillet. Serve the chicken with the pan juices and lime wedges.
