Ingredients:

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/3 cup melted butter
  • 2 tablespoons granulated sugar

For the Cheesecake Filling:

  • 4 (8-ounce) packages cream cheese, softened
  • 1 cup granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup sour cream
  • 1 cup fresh blueberries

For the Blueberry Topping:

  • 2 cups fresh blueberries
  • 1/2 cup granulated sugar
  • 2 tablespoons water
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch (dissolved in 2 tablespoons water)

Instructions:

  1. Preheat the Oven: Preheat your oven to 325°F (163°C). Grease a 9-inch springform pan with butter or non-stick cooking spray.
  2. Make the Crust: In a medium bowl, combine the graham cracker crumbs, melted butter, and sugar. Press the mixture evenly into the bottom of the prepared springform pan. Use the back of a spoon to create an even crust. Bake the crust in the preheated oven for 10 minutes. Remove from the oven and let it cool while you prepare the filling.
