Instructions:
Brown the Beef: In a large skillet, heat the olive oil over medium-high heat. Add the beef and cook until browned on all sides. Remove the beef and set aside.
Sauté Aromatics: In the same skillet, add onions and garlic. Cook until onions are translucent.
Simmer: Return the beef to the skillet. Add beef broth and bring to a simmer. Reduce heat and cook for about 15 minutes, or until the beef is tender.
Creamy Sauce: Stir in the heavy cream, Dijon mustard, and black pepper. Cook for another 5 minutes until the sauce thickens slightly.
Cook Noodles: Meanwhile, cook the egg noodles according to package instructions.
Combine and Serve: Drain the noodles and add them to the skillet with the beef and sauce. Toss to combine. Season with salt to taste.
Garnish and Enjoy: Serve hot, garnished with chopped parsley and a sprinkle of grated Parmesan if desired.
