Country Cabbage Rolls Straight From A Mennonite Kitchen

Ingredients:

For the Cabbage Rolls:
  • 1 large head of cabbage
  • 1 pound ground beef
  • 1 cup cooked rice
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup tomato sauce
For the Sauce:
  • 2 cups tomato sauce
  • 1 cup beef broth
  • 1/4 cup brown sugar
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon Worcestershire sauce
  • Salt and pepper to taste

Instructions:

  1. Prepare the Cabbage:
    • Bring a large pot of salted water to a boil.
    • Carefully remove the core from the cabbage and place the whole head in the boiling water.
    • Cook for about 5-7 minutes until the outer leaves are softened and can be easily peeled off. Drain and set aside.
  2. Prepare the Filling:
    • In a skillet, cook the ground beef over medium heat until browned. Drain excess fat.
    • In a large bowl, combine the cooked beef, cooked rice, chopped onion, minced garlic, thyme, paprika, salt, pepper, and 1 cup of tomato sauce. Mix well.
  3. Assemble the Cabbage Rolls:
    • Preheat the oven to 350°F (175°C).
    • Take a cabbage leaf, place a scoop of the beef and rice mixture in the center, and roll it up, tucking in the sides as you go. Place the rolled cabbage in a large baking dish, seam side down.
  4. Prepare the Sauce:
    • In a bowl, mix together 2 cups of tomato sauce, beef broth, brown sugar, apple cider vinegar, Worcestershire sauce, salt, and pepper. Adjust the seasoning to taste.
  5. Bake:
    • Pour the sauce over the cabbage rolls, ensuring they are well-covered.
    • Cover the baking dish with foil and bake in the preheated oven for 1 to 1.5 hours, or until the cabbage is tender.
  6. Serve:
    • Remove from the oven and let it cool slightly before serving. Spoon some of the sauce over each cabbage roll when serving.
