CHICKEN FRIED RICE

Ingredients:

  • 1 1/2 teaspoons sesame oil or to taste
  • 4 large Eggs
  • 5 c cooked white rice chilled*
  • 2 tablespoons soy sauce (or GF Tamari) or added to taste*
  • 3 tablespoons extra light olive oil or high heat cooking oil
  • 12 ounces frozen peas and carrots fully thawed
  • 1/4 c green onion chopped
  • 1 pound chicken thighs boneless, skinless, and trimmed
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper

Directions:

  1. Slice the chicken thighs into small pieces and remove any excess fat.
  2. Place the chicken slices into a mixing bowl, then season them with 1/2 teaspoon salt and 1/4 teaspoon pepper. Toss until well coated.
