Directions:
1: Mash the boiled potatoes in a large bowl until smooth. Let them cool slightly.
2: Add the shredded cheddar, mozzarella, Parmesan, green onions, minced garlic, flour, egg, salt, and pepper to the mashed potatoes. Mix until well combined.
3: Take a small handful of the potato mixture and flatten it into a patty. Place a small amount of mozzarella cheese in the center and fold the potato mixture around it, forming a cake. Repeat with the remaining mixture.
4: Heat olive oil in a large skillet over medium heat.
5: Fry the potato cakes in batches, cooking for 3-4 minutes on each side or until golden brown and crispy.
6: Remove the potato cakes from the skillet and drain on paper towels. Serve hot.
