Instructions:
Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper for easy cleanup.
Mix the meatloaf base: In a large bowl, combine the ground beef, breadcrumbs, milk, egg, onion, garlic, salt, pepper, and Worcestershire sauce. Mix everything together until fully combined.
Shape and stuff: Take small portions of the meat mixture, flatten them slightly in your hand, and place a little cheddar cheese in the center. Mold the meat around the cheese to form bite-sized balls. Place them on the prepared baking sheet.
Glaze it: In a small bowl, whisk together the ketchup and mustard. Brush this glaze on top of each meatloaf bite.
Bake for 25-30 minutes, or until the meatloaf bites are cooked through and nicely caramelized on top.
Garnish with additional chopped parsley and serve warm!
