Cheesy Ground Beef Quesadillas

Instructions:

Heat a splash of olive oil in a skillet over medium heat. Cook the onion until it turns soft and clear.

Stir in the garlic and cook for about a minute until fragrant.

Add the ground beef to the skillet along with the chili powder, cumin, salt, and pepper. Continue to cook, stirring until the beef is thoroughly browned and fully cooked. Drain any excess grease as necessary.

Remove the beef mixture from the skillet and clear out the pan.

Place a tortilla in the pan, still over medium heat. On one half of the tortilla, layer a generous amount of cheese, followed by some of the beef mixture, and then a bit more cheese on top.

Fold the other half of the tortilla over the filling and press gently. Cook until the bottom is golden brown, then flip and cook the other side until crispy.

Remove from the skillet and repeat the process for the remaining tortillas.

Cut each quesadilla into wedges and serve hot with any combination of the optional toppings.
