Instructions:
Prepare the Garlic Butter Shrimp:
In a medium-sized skillet, melt 2 tbsp butter over medium heat.
Toss in the minced garlic, letting it sauté until fragrant (around 1-2 minutes).
Season the shrimp with salt, black pepper, and red pepper flakes if you’d like a bit of spice.
Add shrimp to the skillet, cooking them for 2-3 minutes on each side until they turn pink and opaque.
Once cooked, set the shrimp aside for later assembly.
Make the Garlic Butter Spread:
In a small mixing bowl, combine the remaining butter with half of the chopped parsley and a bit more minced garlic. This will be your garlic butter for grilling.
Build the Sandwiches:
Spread the garlic butter generously on one side of each bread slice.
On the unbuttered side of 4 slices, start layering mozzarella cheese, cooked shrimp, and Parmesan cheese.
Sprinkle a pinch of parsley over the filling for added flavor.
Top each with another slice of bread, making sure the buttered side faces outward.
Grill the Sandwiches:
Preheat a skillet or griddle over medium heat.
Carefully place your sandwiches in the skillet. Grill each side for about 3-4 minutes until the bread is golden brown and the cheese is perfectly melted.
Serve:
Slice the sandwiches in half and serve them immediately while they’re hot and gooey.
