Simple and delicious recipe for Cheese Shrimp Penne Pasta with Spinach:

Ingredients:
  • 8 oz (about 225g) penne pasta
  • 1 lb (about 450g) large shrimp, peeled and deveined
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 1/2 tsp red pepper flakes (adjust to taste)
  • 1 cup cherry tomatoes, halved
  • 3 cups fresh spinach, washed and chopped
  • 1 cup shredded Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • Salt and black pepper to taste
  • Fresh basil or parsley for garnish (optional)
Instructions:
  1. Cook the penne pasta according to the package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and red pepper flakes. Sauté for about 1 minute or until the garlic becomes fragrant.
  3. Add the shrimp to the skillet and cook until they turn pink and opaque, about 2-3 minutes per side. Season with salt and black pepper.
  4. Once the shrimp are cooked, remove them from the skillet and set aside.
  5. In the same skillet, add the halved cherry tomatoes and cook for 2-3 minutes until they start to soften.
