Instructions:

Prepare the Oven and Baking Sheets: Preheat the oven to 350°F (175°C). Line your baking sheets with parchment paper for easy cleanup.

Mix the Base Dough: In a large mixing bowl, combine the softened butter, brown sugar, and granulated sugar until the mixture is light and fluffy. Integrate the eggs one at a time, ensuring each is well incorporated before adding the next. Stir in the vanilla extract for flavor.

Combine Dry Ingredients: In a separate bowl, sift together the all-purpose flour, baking soda, cinnamon, nutmeg, and salt. Gradually fold these dry ingredients into the wet mixture until just blended.

Add Extras for Texture and Taste: Fold in the old-fashioned oats, grated carrots, and, if desired, walnuts and raisins.

Shape and Bake: Spoon tablespoon-sized portions of the dough onto the prepared baking sheets, spacing them about 2 inches apart. Gently flatten the tops with the back of a spoon. Bake in the preheated oven for 10-12 minutes, or until the edges turn a delightful golden brown.

Cool: Allow the cookies to cool on the baking sheets for 5 minutes before moving them to wire racks to cool completely.

Make the Cream Filling: While the cookies cool, prepare the filling by beating the cream cheese and softened butter together until smooth. Gradually mix in the powdered sugar and vanilla extract until the filling is fluffy and smooth.

Assemble the Cream Pies: Spread a generous amount of cream filling on the flat side of half the cookies. Top with the remaining cookies to form sandwiches.
