Carrot Bars with Maple Frosting

Instructions:

Preheat your oven to 350°F (175°C). Line and grease an 8×8-inch baking dish with parchment paper.

In a large bowl, mix together the grated carrots, melted butter, brown sugar, egg, and vanilla extract until smooth.

In a separate bowl, whisk the flour, baking powder, ground cinnamon, nutmeg, and salt together.

Slowly add the dry mixture to the wet ingredients, stirring gently until just combined.

Pour the batter evenly into the prepared baking dish. Bake for 25-30 minutes, or until a toothpick comes out clean.

While baking, prepare the frosting: Beat the softened butter and cream cheese together until creamy. Add powdered sugar, maple syrup, and vanilla extract. Mix until smooth.

Once the bars have cooled, spread the frosting on top. Garnish with a pinch of cinnamon or carrot shavings if desired.

Cut into squares and serve!
