Blackout Chocolate Cake
Ingredients and Substitutions
For the Cake:
- 1 1/2 cups sugar
- 1/3 cup cocoa powder
- 1 cup whole milk
- 5 oz dark chocolate (preferably 70%)
- 4 1/2 oz butter
- 3 large eggs
- 2 cups wheat flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tbsp vanilla essence
For the Topping and Filling:
- 2 cans condensed milk
- 6 oz dark chocolate
- 1 cup milk
- 1 tbsp butter
- 1 cup chopped nuts (optional)
- Red and green cherries for decoration (optional)
Note: Quality ingredients are crucial for the perfect result.
Steps
- Preparation: Preheat the oven to 350F and grease the molds. Melt cocoa or chocolate powder with milk and sugar, add dark chocolate, and let it cool.
- Mixing Batter: In an electric mixer, combine sugar, butter, and egg whites until creamy. Add vanilla essence, egg yolks, and the cooled chocolate mixture. Mix thoroughly.
- Adding Dry Ingredients: Incorporate flour, baking soda, and baking powder into the mixture. Divide it between the two molds and bake for 35 minutes or until a metal stick comes out clean.
- Filling and Glazing: In a saucepan, melt chopped dark chocolate with condensed milk and milk. Add butter for a creamy texture. Fill cakes with the chocolate cream, stack them, and cover with the same cream using a spatula. Garnish with nuts or cherries.
