Banana Bread Cinnamon Rolls

Instructions:

Activate the Yeast:
In a small bowl, combine warm milk with a pinch of the sugar. Sprinkle the yeast on top and let it sit for 5-10 minutes until it becomes foamy.

Prepare the Dough:
In a large bowl, whisk together mashed bananas, remaining sugar, melted butter, and eggs. Add the activated yeast mixture and gradually mix in the flour and salt. Stir until a soft dough forms. Knead on a floured surface for 5-7 minutes until smooth and elastic.

First Rise:
Place the dough in a greased bowl, cover it, and let it rise in a warm spot for 1-2 hours until doubled in size.

Make the Filling:
Mix the softened butter, brown sugar, and cinnamon in a small bowl until well combined.

Roll Out the Dough:
Once risen, punch down the dough and roll it out on a floured surface into a rectangle, about ¼ inch thick.

Fill and Roll:
Spread the cinnamon filling evenly over the dough. Starting from one long edge, tightly roll the dough into a log shape.

Slice and Arrange:
Cut the dough log into 12 equal pieces and place them in a greased baking dish, leaving a little space between each roll.

Second Rise:
Cover the dish and let the rolls rise for another 30-45 minutes until puffy and nearly doubled in size.

Bake:
Preheat your oven to 350°F (175°C). Bake the rolls for 20-25 minutes until golden brown and fully cooked.

Make the Cream Cheese Icing:
While the rolls bake, beat together softened cream cheese, butter, powdered sugar, and vanilla until smooth and creamy.

Ice and Serve:
Allow the rolls to cool slightly before spreading the cream cheese icing on top. Enjoy warm for the best flavor!
