Salmon is a great source of protein and omega-3 fatty acids, while asparagus is loaded with vitamins and minerals. The lemon garlic butter sauce adds a tangy and savory note that complements the salmon and asparagus perfectly. Here’s a simple recipe for you:
Ingredients:
- 4 salmon fillets
- 1 bunch of asparagus, trimmed
- 4 tablespoons olive oil
- 4 cloves garlic, minced
- 2 tablespoons fresh lemon juice
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and pepper, to taste
- Lemon slices, for garnish
- Fresh parsley, chopped, for garnish
Instructions:
- Preheat your oven to 400°F (200°C).
- Cut four large pieces of aluminum foil, each large enough to wrap around a salmon fillet and some asparagus.
- Place each salmon fillet in the center of a piece of foil. Arrange a handful of trimmed asparagus around each fillet.
- In a small bowl, mix together the olive oil, minced garlic, lemon juice, dried oregano, dried thyme, salt, and pepper.
- Drizzle the olive oil mixture evenly over each salmon fillet and asparagus.
- Fold the sides of the foil over the salmon and asparagus to create a packet. Seal the edges tightly.
- Place the foil packets on a baking sheet and bake in the preheated oven for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.
- Carefully open the foil packets, being mindful of the hot steam. If desired, garnish with lemon slices and chopped fresh parsley.
- Serve the baked salmon and asparagus directly from the foil packets or transfer to plates.
