Salmon is a great source of protein and omega-3 fatty acids, while asparagus is loaded with vitamins and minerals. The lemon garlic butter sauce adds a tangy and savory note that complements the salmon and asparagus perfectly. Here’s a simple recipe for you:

Ingredients:

  • 4 salmon fillets
  • 1 bunch of asparagus, trimmed
  • 4 tablespoons olive oil
  • 4 cloves garlic, minced
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste
  • Lemon slices, for garnish
  • Fresh parsley, chopped, for garnish

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. Cut four large pieces of aluminum foil, each large enough to wrap around a salmon fillet and some asparagus.
  3. Place each salmon fillet in the center of a piece of foil. Arrange a handful of trimmed asparagus around each fillet.
  4. In a small bowl, mix together the olive oil, minced garlic, lemon juice, dried oregano, dried thyme, salt, and pepper.
  5. Drizzle the olive oil mixture evenly over each salmon fillet and asparagus.
  6. Fold the sides of the foil over the salmon and asparagus to create a packet. Seal the edges tightly.
  7. Place the foil packets on a baking sheet and bake in the preheated oven for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.
  8. Carefully open the foil packets, being mindful of the hot steam. If desired, garnish with lemon slices and chopped fresh parsley.
  9. Serve the baked salmon and asparagus directly from the foil packets or transfer to plates.
