Arizona Sunshine Lemon Pie

Retrieve your pie crust from the freezer or prepare one from scratch. Personally, I opted for a frozen deep dish pie crust and it yielded excellent results. To increase its stability, I would recommend placing it on a baking sheet. Nevertheless, if you’re using a pie crust that you made yourself in a glass dish, this step may not be necessary.

Adjust your oven’s temperature setting to 350 degrees in order to preheat it.

After washing your lemon thoroughly, chop it up and take out all the seeds. Since the whole lemon will be blended, it is not necessary to remove its peel. Simply add it to your blender.

After that, include the eggs, butter, vanilla, and sugar into the blender. Blend the mixture until it’s smooth. Begin at power level 5 and gradually increase to 10.

Once the mixture is smooth, pour it into your pie crust. Cook the pie for around 40 minutes, or until it solidifies.

Allow the pie to cool, then refrigerate it to chill.

For the topping

You could consider freezing a bowl and beaters for 20 minutes before utilizing them as one alternative. Once they are frozen, combine whipping cream and sugar in the bowl and whip until peaks form.

Before serving, refrigerate the pie and cut it into slices. You can top each slice with a small dollop of whipped cream. While it can be enjoyed warm or at room temperature, we recommend serving it chilled for best results.
