Apple and cinnamon cake

Here’s a delicious recipe for an apple and cinnamon cake. This cake is moist, flavorful, and perfect for fall or any time you’re in the mood for a comforting treat.

Ingredients:

For the Cake:

  • 2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup plain yogurt or sour cream
  • 2 cups peeled, cored, and finely chopped apples (about 2 medium-sized apples)

For the Cinnamon Sugar Topping:

  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon

For the Optional Glaze:

  • 1 cup powdered sugar
  • 2-3 tablespoons milk
  • 1/2 teaspoon vanilla extract
Instructions:
  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. Combine Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and ground cinnamon. Set aside.
  3. Cream Butter and Sugar: In a large mixing bowl, cream together the softened butter and 1 cup of granulated sugar until light and fluffy.
  4. Add Eggs and Vanilla: Beat in the eggs, one at a time, and then add the vanilla extract, mixing well after each addition.
  5. Alternate Wet and Dry Ingredients: Gradually add the dry ingredients to the wet ingredients, alternating with the yogurt or sour cream. Begin and end with the dry ingredients. Mix until just combined.
  6. Fold in Chopped Apples: Gently fold in the chopped apples until evenly distributed in the batter.
  7. Prepare Cinnamon Sugar Topping: In a small bowl, mix together 2 tablespoons of granulated sugar and 1 teaspoon of ground cinnamon for the topping.
