Tuna Melt Sandwich

Ingredients:

– 2 cans (5 ounces each) tuna, drained
– 1/4 cup mayonnaise
– 2 tablespoons minced red onion
– 2 tablespoons chopped fresh parsley
– 1 tablespoon lemon juice
– 1/2 teaspoon Dijon mustard
– Salt and pepper, to taste
– 4 slices of bread (your choice of bread)
– Butter, softened
– 4 slices of cheddar or Swiss cheese
– Optional: Sliced tomatoes, sliced avocado, or pickles for garnish

Instructions:

1. In a medium bowl, combine the drained tuna, mayonnaise, minced red onion, chopped parsley, lemon juice, Dijon mustard, salt, and pepper. Mix well to combine all the ingredients.

2. Preheat a skillet or griddle over medium heat.

3. Butter one side of each bread slice.

4. Place two slices of bread, butter-side down, on the skillet or griddle.

5. Divide the tuna mixture equally between the two slices of bread, spreading it evenly.

6. Top each tuna-covered slice with two slices of cheese.

7. Place the remaining two slices of bread, butter-side up, on top of the cheese.
