Beef roast pot, also known as a pot roast, is a classic dish made by slow-cooking a tough cut of beef along with vegetables and seasoning in a pot or slow cooker. The slow cooking process helps to tenderize the meat and allows the flavors to develop and meld together.

Here’s a basic recipe for beef roast pot:

Ingredients:
– 3-4 pounds of beef roast (such as chuck roast or round roast)
– 2 tablespoons vegetable oil
– 1 onion, sliced
– 2-3 cloves of garlic, minced
– 3-4 carrots, peeled and cut into chunks
– 2-3 potatoes, peeled and cut into chunks
– 2 cups beef broth (or beef stock)
– 1 cup red wine (optional)
– 2 bay leaves
– 1 teaspoon dried thyme
– Salt and pepper to taste
Instructions:
1. Preheat your oven to 325°F (163°C) or prepare your slow cooker.
2. Season the beef roast with salt and pepper on all sides.
3. Heat the vegetable oil in a large oven-safe pot or skillet over medium-high heat. Brown the roast on all sides until it develops a nice crust. Remove the roast from the pot and set it aside.
4. In the same pot, add the sliced onion and minced garlic. Sauté for a few minutes until they become fragrant and start to soften.
5. Add the carrots and potatoes to the pot and stir them with the onions and garlic.
6. Place the browned beef roast back into the pot on top of the vegetables.
7. Pour in the beef broth and red wine (if using). The liquid should come up about halfway up the sides of the roast. Add the bay leaves and dried thyme.
8. Cover the pot with a lid or aluminum foil if using an oven-safe pot. If using a slow cooker, place the lid on top.
9. Transfer the pot to the preheated oven or set the slow cooker to low heat.
10. Cook the beef roast for about 3-4 hours in the oven or 6-8 hours in the slow cooker, or until the meat is tender and easily shreds with a fork.
11. Once cooked, remove the pot from the oven or turn off the slow cooker. Carefully remove the beef roast and place it on a cutting board. Allow it to rest for a few minutes before slicing.
12. Serve the sliced beef roast with the cooked vegetables and some of the cooking liquid as a sauce.
