Balsamic Grilled Chicken with Avocado

A simple grilled chicken that’s marinated in balsamic vinaigrette, topped with melted cheese, avocado, tomato, and basil!

ingredients:

1 pound boneless skinless chicken breasts or thighs, pounded thin

1/4 cup balsamic vinaigrette

8 ounce fresh mozzarella ball, sliced (or 1 cup shredded mozzarella)

1 large avocado, sliced or diced

1 cup tomato, diced

2 tablespoons basil, sliced

directions:

Marinate the chicken in the balsamic vinaigrette for 20 minutes to overnight.

Shake off the excess marinade and grill (or pan fry) over medium-high heat until cooked through, about 3-5 minutes per side.

Place the cheese on top of the chicken and let it melt.

Enjoy the grilled chicken topped with avocado, tomato, and basil.

Option: Drizzle the chicken with avocado and tomatoes drizzled with balsamic reduction or balsamic vinaigrette.

Option: Add crumbled bacon!

Option: Enjoy as a sandwich in a bun!
